Vegan, Nut free, Carrot Smokey Mac & "Cheese"

paleo* + vegan + gluten free* + dairy free

cook time: 1 hour

serves: 4 to 5


boiling pot

medium sized skillet or blender

pasta of choice (select gluten free pasta and/or sub for cauliflower gnocci to make paleo)

avocado oil

6 small carrots

4 gloves of garlic (minced)

1/4 unsweetened coconut milk

12 cup vegetable stock

1/2 cup nutritional yeast

sea salt

black pepper

garlic powder

smoked paprika

cayenne powder

red pepper flakes


fill boiling pot with water, bring to a boil

when boiling add in carrots (chop off tops of the carrots first)

boil for 40 minutes or until very soft

drain carrots and set aside

start cooking pasta according to the instructions

while the pasta is cooking...

add the following into the food processor or blender

boiled carrots

1/4 cup coconut milk

blend until creamy

cook minced garlic and 1 tbsp avocado oil in a skillet on low

after a couple of minutes, add carrot mixture to the skillet

with 1/2 cup vegetable stock and mix

season with salt and pepper (don't be shy, after all this sauce is just carrots)

1/2 tsp garlic powder

1 tsp smoked paprika

a dash of cayenne pepper

continue tasting and season to taste

1/2 cup vegetable stock

mix and cook on low for 5 minutes

when pasta is done cooking, drain and then stir into the sauce.

top with red pepper flakes and enjoy!
