Truffle Potato Soup

medium sized pot


small yellow Yukon potatoes (washed & chopped)

5 slices of uncured bacon (chopped)

1/2 cup chopped sweet onion

4 cloves of garlic (chopped)

fresh sage

2 tbsp truffle butter (Traders Joes Truffle Butter, pictured)

1 can full fat coconut cream

1 to 1 1/2 cup veggie stock

salt + pepper


fill a medium sized pot with water and bring to a boil

when boiling, add chopped potatoes to the pot and let cook for 7 minutes drain and set potatoes aside

put medium size pot back on the stove at medium heat

add chopped bacon and cook for 5 to 8 min add chopped onion, garlic, sage and truffle butter to the pot stir and cook for 3 more min add in boiled potatoes

1 can of coconut cream

1 cup chicken or veggies stock

salt and pepper stir it up then turn heat down to low and cover. Let cook for 40 min uncover - mash potatoes with a wooden spoon in the pot (should be really soft) and stir a thick soup texture. You can add another 1/2 cup of stock if too thick, may need a little more salt and pepper. top with sautée steak if you want a really hearty dish and BOOM enjoy!
