Slow Cooker Pork Carnita Bowl

gluten free + grain free + refined sugar free + dairy free

prep time 5 min

cook time 4-8 hours

serves 4-5


slow cooker (crock pot)


midsize sauce pan

baking pan

2-3lb pork loin

oil (avocado or coconut)

1/2 chicken stock

4 limes

spices: salt, pepper, garlic powder, smoked paprika, cumin

1/2 onion

6 garlic cloves

1 can black beans



corn or grain-free tortilla chips

dairy free nacho cheese**

**for the dairy free nacho cheese I used Honest Stand but you can use whatever you want doesn't have to be dairy free. My own recipe coming soon though.)


rub pork loin down with all pork spices

slice 1/2 onion

mince garlic cloves


heat skillet on medium high with a little oil

add pork, garlic and onions to skillet

sear pork on each side until browned, about 4-5 minutes

add everything from the skillet into the slow cooker

add 1/2 cup chicken stock

add 2 limes (juiced)

cook low and slow for 6-8 hours, or high for 4 hours

an hour before wanting to eat...

take 2 forks and shred pork, it should be easy AF

stir into liquid at the bottom of the slow cooker

preheat oven to 350

peel + cut plantains

rub down with all the same spices

grease the bottom of the baking pan with oil + add plaintains

in the over 10 min each side (flipping once)

1/2 can of beans in the saucepan

cook on medium low on the stove for 10-15 min

once cooked, stir in 2 limes (juiced)

add salt, garlic powder, and onion powder to taste

add beans + plantains + pork to bowl with spinach & chips

drizzle in dairy free nacho cheese (or whatever damn cheese you want)

place face in bowl and DEVOUR!

i know this one is a little long BUT it's soooooo worth it!!
