roasted cauliflower + beet hummus tacos

vegetarian + gluten free + grain free

serves 2-3


GATHER

baking sheet

small skillet

corn tortillas

beet hummus

1/2 an avocado

1 head of cauliflower

egg (one per taco)

microgreens (or your favorites greens)

salt

pepper

garlic powder

paprika

olive oil (coconut or avocado)

1/4 tbsp grass fed butter


MAKE

preheat oven to 400 degrees

add oil to baking sheet

cut head of cauliflower and place on the baking sheet

sprinkle more oil + seasons (to taste) onto the cauliflower

bake for 30 minutes

warm tortilla in the oven with the cauliflower for 5 minutes

heat up small skillet on the stove at medium

add grass fed butter to skillet

when melted crack egg

sprinkle sesame seeds on top of egg

let cook all the way through

while the egg is cooking, remove everything from the oven

add tortilla to plate

spread beet hummus

add 1/2 an avocado + roasted cauliflower

once egg is cooked all the way through add to the top of the taco

sprinkle with microgreens
