Orange Chicken + Cauliflower Fried Rice

serves 3-4
GATHER
skillet that can go in the oven (cast iron recommended)
medium size sauce pan
cutting board
knife
avocado or sesame oil
4 gloves of garlic
fresh ginger
2 heads of broccoli
2 carrots peeled
mushrooms
1 whole orange juiced
1 cup soy sauce (coconut aminos to make paleo)
1/2 cup honey
3 chicken breasts
cauliflower rice (i like to buy it frozen, but you can also just dice or add 1 whole head of cauliflower in the food processor to make "rice")
1/2 cup of chicken broth
2 eggs
frozen peas
optional
greens
avocado
sesame seeds
PREP
cut chicken breasts into cubes
rub down with: salt, pepper, smoked paprika, garlic powder, and ground ginger
in a separate bowl mix:
1/2 cup soy sauce
1/2 cup honey
all fresh squeezed orange juice
salt & pepper to taste
stir and place aside
on the cutting board, dice:
carrots
garlic
fresh ginger
mushrooms
broccoli
MAKE
preheat oven at 375
add oil to skillet and place on stove at medium heat
add chicken to skillet
add a little oil to another sauce pan and place on medium-low heat
add scrambled eggs to the pan
once eggs are cooked, remove from pan and set aside for later
add a tiny bit more oil, carrots and broccoli to the same pan
stir occasionally
once mostly cooked, add garlic + fresh ginger + mushrooms
continue stirring
once chicken is mostly cooked, add orange glaze and put in oven
cooks about 10 minutes
add cauliflower rice to skillet with the vegetables
add 1/2 cup chicken broth and 1/4 cup soy sauce
stir and let cook until cauliflower is cooked & most of the liquid is removed
stir in 2 scrambled eggs
remove chicken from oven
add chicken & cauli rice to a bowl or plate with greens (i use whatever I have in the house, usually arugula or spinach)
1/2 an avocado
sesame seeds
pat yourself on the back. stuff food directly into face and never miss take out Chinese food again.
...until you have to do the dishes!
