Maca PB Cookie Ice Cream Sandwiches

grainfree + glutenfree + dairyfree

prep time overnight

cook time 30 min

makes 6 bars


GATHER

1 silicon or glass loaf pan

coconut or avocado oil spray

1 egg

1 cup coconut sugar

1 cup peanut butter

1 pint favorite dairy free ice cream

maca powder

cinnamon

1 cup coconut oil

1/2 maple syrup

1/2 cup dark cocoa powder

small saucepan


PREP

mix ingredients for cookie:

1 egg

1 cup coconut sugar

1 cup peanut butter

maca powder

cinnamon


spray loaf pan with oil

pour cookie batter and spread even, set aside

take ice cream pint out of freezer to thaw


MAKE

preheat oven to 350

bake cookie batter for 18 min

remove from heat and let cool


about 30 min later...

scoop ice cream from pint and spread even over cookie in the loaf pan

put in freezer overnight


next day, whenever you want dessert

remove bars from freezer, cup and place on parchment paper

then add back to the freezer

heat small saucepan on stove to medium low

add

1 cup coconut oil

1/2 maple syrup

heat and then add 1/2 cup dark cocoa powder

mix, then remove from stove

let cool for 10 in, then drizzle on bars.

bars back in the freezer for 5 min to harden and then
