kimchi fried cauliflower rice

its not actually fried, and it's not actually rice.



grain-free + paleo*+ vegetarian + dairyfree


prep time 15 min

cook time 25 min

serves 2-3 people


GATHER

1 large skillet

1 small skillet

2 tbsp oil (I used sesame)

1 bag cauliflower rice (I just Trader Joe's, the frozen one)

1/4 onion

6 garlic cloves

2 heads of broccoli

1/2 mushrooms

2 carrots

1/3 cup frozen peas

2 eggs

1/2 cup soy sauce (if paleo, use coconut aminos)

1/2 cup chicken stock

1/4 cup kimchi or kimchi sauce (I used WildBrine probiotic kimchi)

1/2 tsp garlic powder

1/4 tsp ground ginger

1/4 tsp smoked paprika

salt & black pepper to taste


PREP

cut your veggies: onions, broccoli, mushrooms

mince garlic


MAKE

add oil to skillet at medium heat

once hot, add mushrooms & broccoli

stir around

after 5 min add onions and garlic

continue occasionally stirring

after about another 5 min add cauliflower rice to the skillet

next, add soy sauce/coconut aminos, chicken stock and seasonings (if using coconut aminos you may want to add a little salt because it is sweeter than soy sauce)

add in kimchi and a little bit of the excess liquid

STIR

heat small skillet on another burner and add coconut oil or grassfed butter

once heated, crack egg(s) and cook over easy

TURN THE HEAT UP on the cauliflower rice skillet

when slightly simmering mix in frozen peans

continue cooking and mixing another 5-7 min, or until excess liquid is mostly gone.


when done, add kimchi fried cauliflower rice to a bowl with some mixed greens (optional). Once egg is cooked, place gently on top of the rice. POP that yolk and enjoy!
