Collagen Chocolate Peppermint Cookies

paleo + glutenfree + refined sugar free

prep time

serves 9 cookies


mixing bowl 1 egg 1 cup coconut sugar 1 cup almond butter (you can use any any nut butter) 1/4 cup coconut milk 2 tbsp cacao powder 2 scoops collagen peptides 1 bar Hu Kitchen Crunchy Mint Paleo Chocolate (chopped into small pieces)

optional topping: another bar of chocolate and/or sprinkles


preheat oven to 350

mix all ingredients in a medium sized bowl or stand mixer

bake at 350 for 12 min on parchment lined baking sheet

top with more chopped chocolate pieces and sprinkles

let cool before enjoying - they are even delish fresh out of the fridge.
