breakfast in one skillet

vegetarian + paleo + grain free + refined sugar free + gluten free + dairy free
Prep Time 10 min
Cook Time 30-40 min
Serves 1-2
GATHER
1 large sweet potato (peeled & cut into medium cubes)
1/2 cup mushrooms (sliced)
1 cup arugula (or any greens will do)
1 egg (use 2 , for 2 people)
avocado
pink salt
pepper
garlic powder
paprika
black sesame seeds (optional)
coconut or avocado oil
cast iron pan
MAKE IT
preheat oven to 400
add oil to cast iron pan
place on stove at medium heat
add sweet potatoes and mushrooms to skillet
add all seasonings to taste, mix
cook for 10-15 minutes
remove skillet from the heat
mix in greens with sweet potatoes & mushrooms
crack egg(s) directly on the sweet potato mixture
put in oven for 8-10 min
watch carefully, you want the yolk(s) to be cooked but not hard
remove from oven - skillet handle will be HOT
add 1/2 an avocado with sprinkled sesame seeds
season egg with salt + pepper
insert food into face and enjoy!
